4 Cups warm water 2 TBS yeast 1 TBS salt 1/3 Cup canola(or vegetable) oil 1/3 Cup honey 4 Cups whole wheat flour 5-7 Cups white flour You can mix this by hand, or use a mixer. Mixing by hand is more fun, but harder work. I started making bread by hand just so I could get a feel for the right texture. But a mixer is fine. When I make it now I mix water, yeast, (you don't have to do anything special with the yeast before you mix), salt oil and honey together. Then I add cup by cup the wheat flour. I mix that until it is smooth then slowly mix in the white flour. The amount of white flour you use is up to you depending upon how soft you want your bread. I think every time I make it, the amount of white flour varies- too much will make your bread tough, not enough too sticky. I knead the last cup of flour into the dough by hand in a big bowl on the table. (Doing this part by hand helps me get the perfect smooth texture and the kiddos can help out too!) Then let it rise in a warm area covered until it doubles in size. Punch down the dough, knead it a little, cut into four loaves, let riseagain (only about 15 minutes) in the pans and bake for 30 minutes at 350 degrees. I'm not sure about baking time and elevation or if there are any changes in that regard... but I've found that even if I go 31 minutes, it is too long. You can make this recipe with any number of ration between wheat and white flour - it always turns out wonderful for me! (And my neighbors) Good Luck
