1 1/2 cups flour (you can mix and match the ratio between white and whole wheat, or do 100% of either) 3 1/2 tsp Baking POWDER 1 tsp salt 1 TBS white sugar 1 1/4 cups milk 1 egg 3 TBS melted butter 1-2 TBS of lemon juice sift together dry ingredients, add the wet ingredients. Mix together until smooth (use a blender for uber fluffy pancakes)and let rest for 10 to 15 minutes before frying the cakes on a griddle. The rest time is important to let the acid from the lemon interact with the baking powder for a more fluffy cake. These cakes will be very fluffy, so be sure that your griddle is not too hot or the outsides will burn before the insides are done. Kapeesh?! ENJOY!
